The Tuna Jaw or some will call it Tuna Kama. This part is located behind the gill and arguably the best part of the Tuna is Asian cuisine. The Jaw is shaped liked a sickle, hence the name ‘Kama’ in Japanese. It is best cooked with salt and pepper and grilled over a fire. The flesh has a texture of the oilly belly and the tenderness of the cheek. When cooked in hotpot, the flesh and collagen simply melts in your mouth and not forgetting the nutritious soup that is left to be savoured.

Each jaw is about 500g. It is vacuumed packed, frozen at -18 deg C. While effort has been made to remove the scale, some may remain on the outer surface. Please remove them before cooking.
